Our process is all about treating your grapes with the utmost care from the receiving bay until your wine is safely bottled. We have multiple sorting tables, and optical sorting to ensure quality without over handling delicate fruit. Optional “gravity” transfers (no pumps) of grapes and musts are available, to treat your vintage as gently as possible. The option of open or closed pressing allows us to maximize control over oxygen exposure to protect your vintage. Cap management techniques include punchdowns, pumpovers or bubbling.
